Garlic Lime Hummus

There’s something deeply satisfying about turning a handful of humble ingredients into something crave-worthy. This homemade hummus is exactly that. Store bought hummus seems convenient until you flip the container and read the ingredients. Most brands use refined seed oils like soybean or canola oil, preservatives and natural flavors that don’t need to be there. Making it at home takes less than 10 minutes and you know exactly what goes in it.

Why I Love This Recipe

This hummus is all about balance. The richness of tahini, the brightness of fresh lime and the mellow heat of garlic. I like mine with a little texture so I skip peeling the chickpeas. It’s rustic, real and full of flavor.

And yes, I used lime instead of lemon. Not a mistake. I had a lone lime rolling around in my crisper drawer and it turned out to be exactly right. Sometimes the best recipes happen when you just use what you have.

Ingredients

  • 2 cups cooked chickpeas (about 1 can or 1 cup dried, cooked from scratch)
  • ¼ cup tahini
  • Juice of 1 lime (about 2 tablespoons)
  • 1-2 cloves garlic, minced
  • 2 tablespoons olive oil plus more for drizzling
  • 2-4 tablespoons cold water (adjust for texture)
  • ½ teaspoon salt or to taste
  • Optional: ¼ teaspoon ground cumin, pinch of paprika or cayenne for a little kick

Instructions

  1. In a food processor, combine chickpeas, tahini, lime juice, olive oil, garlic, salt and any optional spices.
  2. Blend until smooth, adding cold water one tablespoon at a time until you reach your desired creaminess.
  3. Taste and adjust seasoning. Add more lime juice for brightness or a pinch more salt if needed.
  4. Scoop into a bowl, drizzle with olive oil and sprinkle with paprika or fresh herbs if you like.

A few tips

  • Cold water is the secret to extra creamy hummus. Don’t skip it.
  • Taste as you go. Every lime and every batch of chickpeas is slightly different.
  • Cooked from scratch chickpeas make a noticeably creamier result than canned but canned works perfectly too.

Fresh veggies, gluten free crackers, warm pita or honestly just a spoon. No judgment here.
